Madeira Cake

Instructions

Preheat oven to 170C / 325F / 150 fan / gas mk4
Grease and line your deep cake tin

Ingredients

Please refer to the – Madeira Cake Chart (below)

Method

Sift into the mixing bowl your flour and baking powder
Add the sugar, margarine, eggs and milk
Mix together with a spoon and then use your electric mixer and beat for 1 minute only on medium to fast speed
At this point, add any flavourings ensuring they are well mixed in
Tip the batter into the tin and spread evenly. Tap the tin on the work surface to release any air pockets and then make a depression in the centre of the mixture (see tips for explanation)
Bake for 55 mins – 1 hour until a skewer inserted in the middle of the cake comes out clean
Remove from the oven and leave to cool for 15 mins
Remove from the tin, peel away the paper and leave on a wire rack to cool completely before slicing
The cake keeps very well if wrapped and in an airtight container

Tips

  • I use the diet spray butter when lining tins
  • Making the depression in the centre will help to keep the cake level
  • Wrap the cake when at room temperature in grease proof paper followed by tin foil
